Healthy Eating VideosThe benefits of olive oil are routinely touted in Healthy Recipe Magazines, the Food Network and especially Rachel Ray(didn’t she coin the acronym, EVOO?). Olive oil promotes heart health and is a staple of the Mediterranean diet. Quality fats are essential to our diet, providing necessary fuel for our cells, protecting vital organs and building cell membranes.

Problem is most people use olive oil at high heats, which causes the oil to oxidize and partially hydrogenate, converting the once healthy olive oil into a trans fat. Keep in mind that, trans fats can raise cholesterol and increase the risk of heart disease. The recommended daily allowance of trans fats in your diet is zero so be cautious when your heating your olive oil at high temperatures.
